Thiago Sabino now manages the coffee shop’s quality department. And he promises that he will return to competitions once and for all. In the meantime, he created Il Barista’s first indoor championship in an area set up to prepare professionals for competitions.
Shortly after the championship, he received another proposal to work in Australia. And will he go? “I want to compete in a few more Brazilians championships, to see if the work I’m doing here at Il Barista is worth it, and then who knows, to decide what to do. It is a dream of mine, accumulate experience and share with professionals in Brazil”, he explains.

Meanwhile, the Thiago is very busy helping to set up a new roasting place, coffee shop and classrooms for Il Barista, located on Av. Juscelino Kubitschek, west of São Paulo, and by the end of the year will be ready. “The roasting should be running in over 90 days”, he confided.
He says there is already a huge list of Il Barista clients who want to attend classes. There will be three different courses: the basic; and the intermediate, where the students will visit a farm for five days; and the advanced, where the student will have the opportunity to go to the USA. “We are already partners of SCAA (Specialty Coffee Association of America) in Brazil and we will provide space to teach the courses here. We want to be the biggest coffee shop in Brazil!!!”, he predicts.
Plans for the future are certainly ambitious, but for a Virgo as methodical as Thiago, whose motto is never to give up, it seems like it’s just a matter of time for all of them to come true.
