“Bike and coffee are two passions that bring people closer”
Bearing in mind this idea, Paulo Filho and his partner Camila Romano, both designers, created, in June 2014, bike cafe King Of The Forks, located in São Paulo west region, Pinheiros neighborhood. The bike cafes’ wave pervaded the city with the increase in the number of people who adopt this medium of transportation. And the atmosphere created inside K.O.F reminds this universe, naturally. The bike hanging on the wall provides a clue, as well as the mini store with items like caps, small bottles and many other accessories of this universe. KOF is ideal for those seeking a place to rest after having biked, because it offers, among other things, a bike parking next to the front door.
Two wheels and coffee
Paulo’s passion for bicycles starts in his childhood, when he used to bike with his father. As adult, during a trip across England, he came to know the bike cafe concept and decided to bring the idea to Brazil. His interest in special coffees, however, came a little later.
“The interest in coffee came when the business started to consolidate; then, Camila and I started to study and invested in this coffee world. We attended barista courses and did not stop there”, he tells.
For the moment, the coffee shop serves 3 varieties of grain: Mundo Novo, Obatã Amarelo and Catuaí Vermelho, prepared by 3 different methods: Aeropress, HarioV60 and Cold Brew. Coffees are roasted by Hugo Wollf, from Wollf Café. K.O.F. baristas’ team comprises Ciro Mecenas, Juan Shim, Guilherme dos Santos and Janaína Tiemi.
During Grão Especial visit, we ordered an Obatã Amarelo prepared in Aeropress by barista Guilherme Dos Santos who, after having finished the process, sat at our table to tell us about the coffee influence in his life.
Gui tells that he worked in IT area and resigned to enter the world of coffee. He started his adventure with a barista course at COLMEIA – Institution dedicated to the youth, an NGO that helps youth choose a profession. He is a barista for five years now and joined K.O.F six months after its opening.
Asked about his favorite preparation method, he doesn’t hesitate: “I’d rather prepare coffee in the espresso machine, I identify more with it, and I’m more intimate to it. I like the other methods, I like to try all the different ways of preparation, but I have a special interest in espresso. When I go to a coffee shop, I order a drip coffee and one espresso, one for tasting and the other to compare with mine”.
