Aiming at showing the whole Brazilian coffee industry potential, Octavio Café is a true reference. Located at Itaim, in the heart of Av. Brigadeiro Faria Lima, surrounded by companies and most sophisticated shopping malls in the city, the place counts on an elegant decoration, leather couches, wide halls, and, upstairs, several rooms for events to serve its public.
Here, blends created by its team of baristas are served, using grains from six coffee farms (Fazenda Nossa Senhora Aparecida, Fazenda São José, Fazenda Santa Adélia, Fazenda Santa Rita, Fazenda Santa Maria and Fazendinha), located in Pedregulho, Alta Mogiana, São Paulo countryside. The owner is the former São Paulo governor Orestes Quércia family, whose father, in the beginning of the last century was already a coffee producer. Today, they are among the six largest coffee producers in Brazil.
The house also offers micro-lots of small producers of special coffee. Highlight to the grand Strada, da La Marzocco, painted in orange, color of the house’s logo, in the middle of the main hall.
Another highlight is the variety of methods of preparation and the menu created by a chef. There is also an exclusive list for the type of coffee preparation, including from a simple cloth strainer to methods that play with physics, like the Syphon or small globe. But there is much more: express, strained (traditional strain, hario v60, chemex) French press, Italian coffee maker, aeropress. You only have to choose!

Lecture on the Aeropress method
During the experience offered by the cafeteria, in April, eight different types of coffee were prepared using the Aeropress method by the team of baristas: Henrique Ortiz, Martha Grill and Monique Carvalho. Some very concise in delivering the grain flavor, since only ‘catuaí vermelho’ variety was reserved to the test. We could taste all variations of the beverage, including the cold brew, always reinforcing Aeropress number one rule: not having rules.
Not even the original position of the machine was respected, and most preparations were carried out with the Aeropress ‘backwards’, the favorite position to Octávio Café baristas. Concentrations also varied, including the by-pass technique, where water is previously placed in the final recipient to produce a softer dilution. Thus, the range of options was wide, showing the universe yet to be explored by this recent invention that is increasingly being adopted in the world of special coffees.
As suggested in the lecture, Aeropress proved to be very versatile to prepare the beverage, and so easy to handle that our team could prepare a small black coffee.
