Sofá Café began its trajectory in 2011, when Diego Gonzales quit his profession, as a forestry engineer, to follow the path of specialty coffees. To this day, it is him who controls the whole process of Sofá Café, from choosing the grains, passing by toasting, to the teaching of the baristas who work in the house.
With three units in the state of São Paulo, one in Rio de Janeiro and another one in the city of Boston in the United States, the cafeterias have the unmistakable decoration filled with fairly cozy sofas, as well as the quality of coffee serving a blend of grains chosen from different farms all over Brazil, toasted in loco at the Pinheiros unit. This blend incorporates five different sensorial coffee profiles, called: Comfort, Cult, Melado, Ventura and Super Special. With unique characteristics, the five types are sold in grains within 250 grams packages and are for sale online and in physical stores. In its menu, coffee can be prepared in several ways: espresso, Aeropress, filter Hario V60, siphon, chemex, French press and Cold Brew.
At Sofá Café, five different courses are held: Barista I, II and III; Water – the basis of coffee; Brew – secrets to prepare a delicious coffee, plus three different types of consultancy: team training; elaboration of coffee blends for restaurants and cafeterias; and hints for opening new coffee shops.
In addition, the excellent project named “Fazedores de Café” is held there, designed for young people with low incomes and over 17 years of age. The idea is to offer a series of courses free of charge, for a “complete special coffee training”, from extraction, going through the whole chain: from grain production to the creation of a coffee shop. The result is so good that the blend developed by the students in the course is sold and used in the Café Sofa.
Despite the numerous awards already won, coffee did not divorce from its original idea: offering the comfort of a home-made sofa to enjoy a coffee of exceptional quality. A totally Brazilian idea, by the way!
