Third place in the COCCAMIG’s auction (Cooperativa Central de Cafeicultores e Agropecuaristas de Minas Gerais) held in 2016, specialty coffee micro batches from Fazenda dos Tachos, are the basis of both Cold-Brew and Cold-Brew Nitro sold by Suplicy Cafés, latest news in the coffee shop network led by Marco Suplicy.

And, believe me: these micro batches make a big difference. With a light roast, both Cold-Brew and Cold-Brew Nitro are cold-extracted in a process that can take up to 12 hours. “Hot water has the advantage of extracting the solubility of some of the coffee constituents more quickly. Cold water takes longer to extract and accentuates different elements, so they have different flavors. The cold is less bitter and less acid. I’m sure both Cold-Brew and Cold-Brew Nitro will be highly accepted by the Brazilian audience. Especially the Nitro version, which the taste closely resembles a draught beer. I’m betting it will be our greatest hit in the next summer,” Marco Suplicy enthuses.

A change of heart

For Suplicy, the great issue is the habit. “Americans, Asians, Europeans, all drink cold coffee, except the Brazilian,” he explains. “I find it very tasty, it does not need to be sweetened, and it is made to be consumed very cold. It’s also delicious when you add an ice cube or a lemon slice”, he says.

Our coffee shop has been working for a few years with Cold-Brew, but we are launching Nitro. “In the U.S. there are studies that show that with Nitro, it is possible to bring into a coffee shop the pure coffee drinker who, without the option, would not go to the coffee shop because he did not like coffee sold there. Nitro accompanies any meal as well as any soft drink. It easily replaces a juice or even a refrigerant. And it combines with both sweet and savory,” he explains.

Explaining Nitro, the Cold-Brew

Nitrogen is an inert gas; therefore, it only adds to the coffee more texture, promoting the foam. It takes six hours to make three liters of Nitro. After the coffee is ready, it is necessary to place it in the barrel of draught beer, with the capacity for eight liters. To serve, the coffee passes through the serpentine and comes out cold, with characteristics similar to the draught beer, which the Brazilian people loves. In the US, Nitro can be found with added milk and other variations

Making Your Cold-Brew at Home

For those who want to try this Cold-Brew at home, Marco warns that in October, KitchenAid will bring to Brazil a Cold-Brew maker, both for teas and coffees, which will make it easier for the consumer to make the beverage at home. “I recommend leaving the tea infusion for six hours and the coffee infusion for twelve hours. But, the most important is the quality of the specialty coffee which will be used in the process,” he says. But if you do not want to wait until October, you can make Cold-Brew at home, in a French press. Just put the coffee powder with the cold water in the refrigerator and let it rest all night. In the morning, you just have to decant, remove the coffee powder, and your beverage is ready,” Marco says.

“In the U.S., Cold-Brew’s success is so great that Starbucks took advantage of the summer to sell the product at 600 stores. Quickly, they had to include the product in another 1000 coffee shops. I have a friend who went to Disney in July and said that all the cafes are already offering the drink,” he says.

Cold Brew is sold at the store in the alameda Lorena 1430 and at the recently inaugurated Suplicy Cafés Especiais, the Vila Olímpia unit, located at the São Paulo Corporate Towers, on Avenida Juscelino Kubitschek, 1909. It can be consumed in the glass (R$ 8,00) or in the 170-ml bottle (R$ 12,00)

Nitro, for the time being, can only be bought at the Vila Olímpia unit. The glass costs R$ 10.00.
